The Olivares estate is called HOYA DE SANTA ANA located in the north West in the heart of the Jumilla situated at 825 meters above sea coast with very long summers and hot with low rainfall and cold winters. The soils are calcareous, sandy, stony and often without rootstocks, but able to retain a lot of humidity allowing the berry not to become suffocated, but releasing sweet flavors with fruity scents, creating body and refinement.

The grapes are chosen from the older plants (actually some from pre-phylloxera as it is one of the few areas that had not been affected in 1800) and are left in over ripening for about 10 days. It is then vinified with a sugary residue of almost 200 gr/L. Fermentation occurs with natural yeasts in a partial way (about 30 days). It does not make aging in wood despite the shocking sensation in the final of black pepper and chocolate. It is put in the bottle between June and August and is left for 2 years before being put on sale.
