The cuvèe is assembled exclusively from chardonnay base-wines, some lots fermented and matured in small oak, others in stainless steel. Applying slightly less liquer de tirage sets Saten apart from Cavalleri’s other Blanc de Blancs; this type of dosage results in a wine of softer pressure. The word Saten, equivalent to the French word Crèmant, is used only for Franciacorta DOCG wines and refers to sparkling wines displaying a silky creaminess on the palate.This characteristic makes Cavalleri’s Saten the most suitable of all our Franciacorta wines to accompany a wide range of dishes.Technical Data First release: 1990 Bottles produced: 20.000 bottles (0,75 lt) Vineyards: Chiosino, Favento, Paradiso, Seradina, Seradina Sotto Harvest: First week of September Average production per vineyards: 85 quintals per hectare Yeld of wine: 50% (50l of wine per quintal of wine) Cuvée: Chardonnay (100%), of which 94% from harvest 2008 e 6% from 2007;80% fermented in stainless steel , 14% in large oak casks and 6% old barriques.
