Vineyards: 7 Chardonnay vineyards, with an average age of 26 years, located in the municipalities of Erbusco, Cazzago San Martino, Iseo and Passirano. 10 Pinot Noir vineyards, with an average age of 24 years, located in the municipalities of Erbusco, Adro and Passirano. Harvest: Second and third week of August. Average yield per hectare: 7,200 kilograms of grapes, equivalent to 4,250 liters of wine (wine yield: 59%). Winemaking: The Cuvée Prestige Rosé is made from the separate vinification of Pinot Noir and Chardonnay. The Pinot Noir grapes, once transported over the vat, are separated from the stalks and berries fall into them from above by gravity. The maceration "pink" is carried out for 24-36 hours: only a few hours to "seize the moment" to get that special, delicate shade of pink that distinguishes the Franciacorta Rosé in the bottle. As a result, the juice separated from the skins fermented in small oak barrels and stainless steel tanks at controlled temperatures. The Chardonnay grapes are vinified in the traditional manner, with the pressing of whole clusters. The best fractions of the must ferment in vats, separately. After 8 months of refinement the "magic ritual" of the creation of the cuvée, assembling the base wines of Pinot Noir and Chardonnay. The blend thus obtained is bottled and aged on the lees in underground cellars at a constant temperature of 12 ° C, for an average period of 30 months. Disgorgement occurs in the absence of oxygen, using a unique system, designed and patented by Ca 'del Bosco. This avoids shock and oxidative further additions of sulfites, making our Franciacorta purest, most enjoyable and most long-lived. Finally, each bottle is packaged in uniquely marked to ensure traceability. Draft: April following the harvest. Aging on the lees: Average duration of 30 months.
