Er the possibility to obtain grapes that reach a perfect sugar-acid balance in addition to enhance the varietal characteristics. The grapes are vinified and then cold soaked for 36 hours in order to get the color "onion-skin", along with the aroma typical of the variety. The wine is processed in accordance with "draft" and started the second fermentation in the bottle and then remain in contact on the lees for a further 18 months. The sparkle turns out to be a very fine grained with great persistence. The bouquet is rich, with hints of rose petals and wild strawberries. The taste is fresh, good thickness, savory with a final wrap and silky.
