Islay means peat above. Miles and miles of bog in the west of the island provide the raw material that characterizes the Southeast Islay malt whiskey, the best known of which is probably Lagavulin ™. The water of the rich and peaty Lagavulin ™ scroll down to the "brown creek" to the distillery, down from Solan Lochs located in the hills overlooking. Islay has nothing rushed, and even the Lagavulin ™, before bottling the whiskey spends sixteen years quietly maturing in oak casks, the maturity period of longer than all of the Classic Malts. A long fermentation, distillation of a long and a long maturation mean that the Lagavulin develop her strong, rich and peaty. It 'a distillate that likes to take his time.
