The Frick family cultivates the vineyard Pfaffenheim at least twelve generations. In 1970, the Domaine was converted to organic cultivation . The first applications of biodynamic agriculture began in 1981. Regular use of biodynamic preparations conjugated with respect to the rhythms and cosmic influences stimulates soil life and increases the resistance of plants to diseases and pests. An optimal age and a limited return to avoid the use of chaptalisation ( enrichment of the must sugar ) . After decanting the musts are fermented with their yeast. The production of wine is characterized by one or two transfer ports and a weak addition of sulfur , excluding all other additives and stabilizers , and concludes with a minimum filtration before bottling. Maturation takes place in oak barrels aged between eighty and one hundred and thirty years . - Grand Cru - crown cap in stainless steel. Pale yellow . Intense aromas of rose, liquorice root and pineapple . Wine is round and soft, dense flavor of roses and quince paste . Long sweet finish with hints of juniper. Temperature: 8-10 ° C .
